Wolfepack BBQ serves up live-fire wood pit barbecue brisket Texas-style using prime cuts from the legendary Creekstone Farms in Ark City, Kansas! They aren’t just respecting KC traditions of ensuring a signature sauce (like their “Bomber Brown” ale sauce, made with the freshly brewed beer of the same name from Wolfepack’s hosts Callsign Brewing Co.), or branching out beyond beef and pork with turkey, Italian sausage from Italian Sausage Co. and even Wagyu hotdogs from KC Cattle Co… But in the spirit of recent brisket revolutionaries in the area— they’re infusing styles picked up by pit masters in areas like Texas and Memphis for things like BBQ brisket tacos, served here on LFK’s famed Caramello’s Sonoran-style tortillas and topped with hot sauce from NKC’s own Barnasty Ferments.
If KC’s gonna be the best in BBQ, it’s gotta keep elevating the game. That’s what owner/pitmaster Jared Wolfe, business partner Sam Parker and their other collaborators feel is happening in the scene right now. Wolfe is taking his experiences working not only with “craft BBQ” innovators like Scott’s Kitchen, Jousting Pigs and Fox&Fire… but also his time spent serving out of craft breweries and witnessing the collaboration and innovation to serve the very best product that bears your name.
That’s why at Wolfepack, everything is smoked fresh daily, with always-fresh sides. There’s no ordering ahead: You have to come down to NKC’s brand new 23,000 square-foot Callsign Brewery expansion on Burlington Street to get it while it’s hot! Menu changes daily and can be found here. Come back soon to see their 1,000 gallon offset smoker make its debut. Lunches and call-ahead ordering to debut with it!
